This Tab section is dedicated to the Scrumptuous Recipes of several women in the Kelly Family. These recipes have been prepared time and time again and, as all time favorites stemming back to when Thelma Kelly first prepared them.  Although we all cook fairly well, over the years we have pulled from the initial learning we received from our mother.
   
We believe we will most likely never be the fantastic cook our mother was but, we learned most of all that we know about cooking directly from her.  Some dishes are more simple than others, however, she mastered the flavors and taste that we consistently attempt to achieve. 

Over the years we have become increasingly confident that the taste and flavors added to our recipes is essentially originated from all that we have learned from our Mother as well as eachother.  Now, we would like to share them with you.  On the otherhand, since we are all from the same cloth so to speak, chances are many of you prepare your dishes similar if not the same as we do.

"Cookiing has always been easy for me.  As a youngster I helped my mother Thelma with all the family dishes and carried this experience with me throughout all the years when preparing meals for my own family. I have many favorites that I prepare, however, my Peach Cobbler has been a sensational favorite among my family for years.  Now, I would like to share this fantastic recipe with all of you so don't hesitate to make this great dessert for your family members and, as you do, add your own pinch of this and that and feel free to make it your own.  Don't hesitate to try it.  You will be glad you did!

Lois's Favorite Peach Cobbler
PREPARATION TIME
45 minutes

SERVINGS
7-10

INGREDIENTS YOU WILL NEED
  1. 2 Large Cans of Sliced Peaches 
  2. 1 Stick of Butter/Margarine
  3.  3/4 measuring cup of Sugar
  4.  3/4 level teaspoon cup of Nutmeg
  5.  3/4 level teaspoon of AllSpice
  6.  2 tablespoons of Self-Rising Flour
  7.  1 measured cup of cooled water
  8. 1 Can of Phillsbury Crust (has 2 rolls)

PREPARE TO MIX YOUR COBBLER 
  •  Slice Your Peaches into additional 1/2 slices (should be 2 per slice)
  • Pour your Peaches in medium size pot and place burner on medium heat (30 min)
  •  add 1/2 stick of butter/margarine, 3/4/ level tsp of nutmeg & 3/4 tsp of allspice
  •  Then... Add 3/4 measured cup of white sugar into same pot with Peaches & all other ingredients.   
  • Of the total 30 minutes on burner, reduce heat last 15 minutes to low (simmer) 
  • Remove pot from burner and set aside to cool for 10-15 minutes, Then.....
  • In a small measuring cup of cooled water add 2 heapings tablespoons of flour and mix thoroughly until smooth with no lumps (Pour this flour mix into Pot and mix all well
  •  Using an oven safe  Pyrex or deep Casserole Dish,  butter the bottom and sides of your baking dish with butter/ margarine.  Then.....
  •  Pour 1/2 of your Peaches with mixed ingredients from cooled pot into your dish 
  • Roll out your crust and lay over your peaches pressing flat and on sides of dish
PREPARE TO BAKE YOUR COBBLER 
  • Preheat your oven to 400 degrees
  • Place your baking dish into the oven
  •  Bake first half until crust is light brown.  (Watch closely until light brown), Then....
  • Take out of the oven.   Now.....
  •  Pour the remaining 1/2 of your Peaches with mixed ingredients over your light brown crust.
  • Now, rollout your 2nd roll of crust and place over your 2nd half of Peaches 
  • Using a fork, puncture a few holes into the top of the crust, Then, sprinkle 1/4 measuring cup of  melted butter/margarine, 1 pinch of cinnamon and one pinch of sugar across crust into holes and across the top.  (Not too much sugar)  
  •  Place your Cobbler back into the oven and bake crust this time until Golden Brown
  • Take out of the oven and let cool for 15 minutes
TIPS:    Since I never use a timer when I place my Cobbler into the oven the first and second time, please watch it closely to avoid over browning your crust.  Remember, your peaches are already done and you are simply browning your crust.

TIME TO PREPARE

60 minutes

SERVINGS

INGREDIENTS YOU WILL NEED:
  1. 5 Large Sweet Potatoes
  2. 1 Stick of melted Margarine
  3. 1/2 Cup of 1% Percent Milk
  4. 1 Cup of Coconut
  5. 2 Cups of Sugar
  6. 1 Tablespoon of Vanilla Extract Flavor

COOKING YOUR POTATOES
Boil your potatoes until done
Drain any excess water from Pot
Then, Mash potatoes & stir until soft 
Add all of the ingredients listed above and stir blend into potatoes in the same pot
Pour potatoes with all ingredients evenly into Pyrex or oven safe casserole dish

PREPARING  YOUR TOPPING
  1. 1 Cup of self-rising Flour
  2. 1.5 cups of light brown sugar
  3. 1 stick of melted margarine
  4. 1 cup of fine chopped pecans
  5. 1 cup of coconut
MIXING YOUR TOPPING
In a large bowl ,mix all the topping ingredients listed above
Your mixture should be crumbley- not wet (sprinkle in additional flour if needed)
Once mix is blended well together, Sprinkle your topping over your potato casserole evenly

TIME TO BAKE YOUR CASSEROLE
Preheat your oven to 350 degrees
Place your Covered dish into the oven- Cover tightly & completely 
Bake approximately 50 minutes or until Golden Brown

Remove from the oven and let stand for 5 minutes

SERVE WHILE WARM AND ENJOY!

INGREDIENTS YOU WILL NEED:
  1. 2 -Del Monte/Hanover or your choice of  14.5 ounce cans of Green Beans
  2. 1 10.75 ounce can of Condensed Cream of Mushroom Soup
  3. 1 6 ounce can of French Fried Onions
  4. 1 cup of Kraft Shredded Cheddar Cheese
PREPARING YOUR GREEN BEAN CASSEROLE 
  • Mix all above ingredients thoroughly using only 1/2 cup of the french fried onions in a large Safe Microwave Bowl/Dish
  • Place dish in microwave with all above ingredients and heat for 3 minutes
  • Take dish out of microwave and stir in additional  1/2 cup of shredded cheese and heat mixture in microwave for an additional 3 minutes
READY TO BAKE
  • Pre-heat oven to 350 degrees.  
  • Transfer Green Bean mixture to an oven-safe Casserole Dish and sprinkle topping with1/2 cup of  french fried onions
Bake your Green Bean Casserole dish 15-20 minutes until cheese has completely melted and your onion topping has began to brown. 

Take out of oven and let stand for 5 minutes.  Serve & Enjoy!

INGREDIENTS YOU WILL NEED
  1. 1 Box of Kraft Stove Top Stuffing with Seasoning Package
  2. 1/2 finely Chopped Onion
  3. 1/2 Stick of Margarine
  4. 1 level tablespoon of Sage
  5. 1/2 cup of dried cranberries (Optional)
PREPARING YOUR STUFFIN DRESSING

Pour 1 box package of Stove Top Stuffin in a large bowl
Add the Seasoning Package that is included in the box
Add 1/2 cup of finely chopped onion
Add 1 level tablespoon of sage 
Mix all ingredients together 

Next, in a small sauce pan, pour in 1/2 cup of water
Place 1/2 stick of Margarine into the water and heat until melted
Once melted, stir together and pour into the bowl with stuffin and all other ingredients
Mix all ingredients together well


TIME TO BAKE YOUR STUFFIN/DRESSING

Pre-heat oven to 350 degrees
In A 9" Pan, Pour your mixed dressing evenly into the pan
Bake for 25 minutes 
Take out and let stand for 5 minutes

" Although a lot of us have moved away from cooking large meals for our familes, I have always enjoyed cookiing and eating right at home.   I have created so many recipes over the years and have now claimed  each as my own.

Displayed below are three (3) recipes that I believe you will wholeheartedly enjoy and when time allows, I challenge you to create my recipes to your own liking and adding a pinch of this and that and make it your own.   Surprise your family with these delicious recipes.

INGREDIENTS YOU WILL NEED
 
  1. 2-10 ounce boxes of Chopped Broccoli
  2. 1 Medium Sweet Onion finely chopped
  3. 1 Can of Cream of Mushroom Soup
  4. 1 Cup of finely shredded sharp Cheddar Cheese
  5. 1 measuring cup of Best Foods Mayonaise
  6. 2 Eggs ( I use Brown Eggs)
  7. 1/2 Small Pkg of Pepperidge Farms (Herb) Stuffing
  8. 1 Stick of Melted Margarine
PREPARING YOUR BROCCOLI CASSEROLE
  • Beat your two (2) Eggs slightly  and melt your margarine, then....
  • Combine my first six (6) ingredients above in the order I list as shown
  • Pour your first 6 ingredients only into your oven safe casserole dish
  • Now, mix your stuffing and melted margarine until smooth
  • Spread your stuffing mix as a topper over your mixed ingredient 
BAKING YOUR BROCCOLI CASSEROLE DISH

Pre-Heat Your Oven to 350 degrees

Place your oven-safe casserole dish on the center rack of your oven
Bake at least 45 minutes- Based on how deep your dish is, baking time may be slightly longer
Jiggle your pan to determine if your casserole is fairly set- if so, casserole is done
Remove from oven and let stand for 5 minutes

INGREDIENTS YOU WILL NEED
  1. 3 Eggs (Beaten)
  2. 1 1/2 cup of  White Sugar
  3. 1/2 Cup of Light Brown Sugar
  4. 1/2 teaspoon of Ground Cinnamon
  5. 1/4 Cup of Melted Butter
  6. 1 tablespoon of All Purpuse Flour
  7. 1 Cup of Raisins
  8. 3 Cups of Whole Milk
  9. 10 slices of  heary farm-style bread toasted & cut into cubes
PREPARING YOUR BREAD PUDDING MIX
**Grease your 2 Quart Oven-Safe Baking Dish & Put Aside Until Needed​

In a large Mixing Bowl Whisk these ingredients thoroughly together:
  • Grease your 2 Quart Oven-Safe Baking Dish and Put Aside until needed
  • 3 Eggs, 1 1/2 Cup of White Sugar, 2 tablesspoons of light Brown Sugar, 1/2 teaspoon of Cinnamon, 1/4 Cup of Butter & 3 Cups of Whole Milk and GENTLY stir in the Bread Cubes & Raisins.  
PREPARING YOUR BREAD PUDDING FOR BAKING
  • Lightly Spoon your mixture into your greased 2 quart baking dish 
BAKING YOUR BREAD PUDDING

Pre-heat oven to 375 degrees
  • ​Place your Baking Dish into the oven Uncovered on the Center Rack & bake for 30 minutes
  • Take dish immediately out of the oven and cover with aluminum foil to prevent excessive browning.  
  • Place your dish back into the oven and continue to bake for an additional 25 minutes on same temperature of 375 degrees. (Do not shut oven off when taking out to cover)
  • After the additional 25 minues of baking your covered dish, take your dish out of the oven and let stand for 10 minutes
PREPARING YOUR VANILLA SAUCE

INGREDIENTS YOU WILL NEED:
  • 1/2 cup of Light Brown Sugar
  • 1 tablespoon of all Purpose Flour
  • A Pinch of Cinnamon
  • 1 Egg
  • 2 tablespoons of Melted Butter
  • 1 1/4 Cup of Whole Milk- I use Organic whole milk
  • 1 pinch of Salt- I use Sea salt
  • 1 tablespoon ofVanilla Extract* (Stir in last)
MIXING & COOKING YOUR VANILLA SAUCE
  • Whisk all of the Vanilla Sauce Ingredients together in a heavy sauce pan until smooth.Place pot on stove top and heat the mixed sauced ingredients over medium heat constantly whisking until the sauce thickens and coats the back of the spoon.
  • Blending the ingredients while constantly whisking should take no more than 10-12 minutes total.
  • Pour the sauce over your warm Bread Pudding or; according to your familes preference, you can pour the sauce into a separate bowl and serve the sauce on the side. 
  • I pour my sauce  directly over my Bread Pudding that is absolutely Delicious!
A Tip for you... For Extra Richness you can substitute Heavy Cream for Milk or: For a Lighter Pudding, you can substitute 2% Milk for Whole Milk

INGREDIENTS YOU WILL NEED-SEE STEPS BELOW
1.        1 1/2 Cup of Graham Cracker Crumbs-                        Graham Cracker Crust
2.        2 Tablespoons of White Sugar
3.        1/3rd Cup of Melted Margarine
4.        2 Large Eggs (Separated Yolk/ White)-                          Filling
5.        1 Can of Sweetened Condensed Milk
6.        1/2 Cup of Key Lime Juice
7.        1 Cup of White Sugar
7.        3 Egg Whites-                                                                 Meringue
8.        1/4 Teaspoon of Cream of Tarter
8.        3 tablespoons of White Sugar
** The agredients listed above are needed for all preparations at different times as you prepare


FIRST....PREPARING YOUR CRUST
Pre-Heat Oven to 350 Degrees, then; Mix these three (3) Ingredients

11/2 Cup of Graham Cracker Crumbs
2 tablespoon of Sugar
1/3 Cup of Melted  Margarine

Mix all three (3) together and spread and press mix in bottom and sides of your 8' round pan
Place baking pan in oven and bake for 10 minutes 
Take pan out of oven and set aside- Do Not turn oven off of 350 Degrees


SECOND......PREPARING YOUR FILLING
2 Large Eggs- Separated
1 can Condensed Sweetened Milk
1/2 measuring Cup Key Lime Juice
1 Measuring Cup of sugar
* Whisk yolks and sweetened condensed milk with sugar and Key Lime Juice
Pour these two mixed ingredients in your baking shell
Bake at 350 Degrees for 15 minutes
Remove your Pie Mix from Oven,  set aside and increase your oven  temperature to 400 Degrees


THIRD.....PREPARING YOUR MERINGUE TOPPING
3 Egg Whites
1/4 Teaspoon cream of tarter- Can be purchased at any grocery store
3 teaspoons of White Sugar
* Beat all three (3) ingredients together until "Stiff" and then spread on top of your Key Lime Pie.


TIME TO BAKE YOUR KEY LIME PIE

Pre-heat Oven to 400 Degrees
 
** Place your Pie back into the oven and Bake at 400 Degrees for 8-10 minutes.
(If you don't have a timer on your oven- then watch closely to remove on time)
Remove your Delicious  Key Lime Pie from the oven and place in the fridge until ready to serve.  Allow at least 30 minutes for your pie to settle into firm cuts when serving

TIME TO PREPARE
35 Minutes 

SERVINGS
12-14 Persons

INGREDIENTS YOU WILL NEED
  1. Macaroni Noodles-  Anthonys or  Elbow  are two brands I use
  2. *1/2 Sharp Mild or Medium Cheddar Cheese block- I use Medium
  3. Two (2) Eggs
  4. 1 1/2 cup of  2% Container Milk
  5. 1/2 Stick of Butter- I use Crountry Crock
  6.  Salt & Pepper
  • * I use Medium Cheese 
PREPARING YOUR MAC & CHEESE CASSEROLE
 
  • In a large pot, pre-heat your water to a soft boil
  • Add your noodles and cook to a full boil and until the noodles swell
  • Drain all water from the boiled Macaroni Noodles & pour back into pot
  • Gently stir in 1/2 Stick of Butter or Margarine- I use Margarine
  • Shred your cheese using 1/2 of the whole block of sharp medium cheese
  • Sit aside the remaining block of cheese to shred and spread as your topping
  • Add 2 cups of Shredded Cheese into your pot 
  • In a separate bowl, beat 2 large eggs & then pour in milk and blend together
  • Pour the eggs & milk mix into the mac & cheese and and mix all together
  •  Add  Salt & Pepper to your taste (Not too much salt)-Sprinkle both into your pot
THEN:........................
  •  Pour Mac & Cheese mix into your oven safe casserole dish
  • Shred an additional measuring  cup of shredded cheese and sit aside until needed
BAKING YOUR MACARONI AND CHEESE CASSEROLE

Pre-heat your oven to 350 degrees
  • Place your casserole dish into oven on center of middle rack- uncovered
  • Bake your macaroni & cheese casserole for 15-20 minutes until slightly sizzling
  • Remove from oven and sprinkle 1 cup of cheese across your casserole as a topper
  • Place back into the oven and change your temperature setting to 500
  • Bake for an additional 2 minutes only to allow the topping to slightly brown
  • Take out of the oven and let stand for 5 minutes

INGREDIENTS YOU WILL NEED
  1. 1 head of Cabbage
  2. 1 teaspoon of Vegetable Oil
  3. 1/4 teaspoon of Pepper
  4. 1 pinch of Salt
  5.  1 teaspoon of Red Crushed Pepper
PREPARING YOUR CABBAGE DISH
  • Cut up your Cabbage
  • Wash & Strain water away
  • In medium to large pot, pour in 1 1/2 measuring cups of water
  • Add all above ingredients and set stove burner between low to medium heat
  • Cover Pot with cover and cook 20-30 minutes
  • Take Pot off burner and you are ready to serve

20 Minutes

INGREDIENTS YOU WILL NEED
  1. 4 Medium Size Pork Chops
  2. Webers Seasoning
  3. McCormick Mesquite Seasoning
  4. Flour
  5. Vegetable Oil
  6. Water
  7. 12" Frying Pan
  8. Zip Baggie
PREPARING YOUR SMOTHERED PORK CHOPS
 
  • Wash your Pork Chops thoroughly
  • Place all chops on a wide Dinner Plate or Flat Paper Plate
  • If your Pork Chops are thick, cut slits at the top of each to insure they cook throughout
  • Lightly season your chops on both sides using seasoning above
  • Pour 2/4 vegetable  oil in your frying pan and heat oil on medium heat
  • In a zipup baggie, pour 3/4 cup of flour into the bag
  • Place  2 chops into the baggie at one time and shake until covered with flour
  • With your oil now hot in the uncovered frying pan, place both floured chops into the pan
  • Repeat the same steps with the 2 additional Pork Chops
  • Fry at least 10 minutes on each side per chop- all must be cooked throughout each chop
  • On A wide dinner plate or paper place place paper towel across the entire plate
MAKING YOUR GRAVY
  • Leaving a small amount of oil, pour most of the oil out of the pan
  • Add 2 heaping tablespoons of flour and reduce the heat to low (simmer)
  • Stir the flour into the remaining oil until the mixture darkens just slightly 
  • Add 1 cup of water to the flour and oil stirring slowly
  • Sprinkle  a pinch of pepper into the mix
  • Using a large fork, place the pork chops into the oil, flour and water mix
COMPLETING YOUR SMOTHERED PORK CHOP DISH

Using your fork, place your pork chops into the homemade gravy
Cover your pan, turn off burner and let your chops simmer into your gravy
Your Smothered Pork Chops are ready to serve at your will!

Tip Serving this dish with cabbage, rice and cornbread will sure to be a hit!

  1. 1 Box of Jiffy Cornbread mix
  2. 1/2 Cup Chopped Onion
  3. 1 Egg
  4. 1/2 Cup of Sour Cream
  5. 1 8oz Can of Creamed Corn
  6. 1/3 Chopped of Jalapeno Peppers
  7. 1/2 Cup of Shredded Cheddar Cheese (Optional)
PREPARING YOUR CORNBREAD MIX
  • Melt 1/2 Stick of Butter in 9X9 Baking Dish
  • Mix together all remaining ingredients above
  • Pour all mixed ingredients over your melted butter in baking dish
BAKING YOUR JALAPENO CORNBREAD

Preheat your oven to 350 degrees

Place your oven safe dish on center rack in oven
Bake your Jalapeno Cornbread for 30-45 minutes until light golden brown
Take out of oven and let stand 1 minute

INGREDIENTS YOU WILL NEED
  1. Skinless Filet Salmon or Steak Salmon- You choose
  2. Roasted or Lemon Garlic Marinade
  3. Fresh Ginger
  4. Black Pepper
  5. Maple Syrup
SEASONONG YOUR SALMON
  • Marinade your Salmon in Roasted or Lemon Garlic Marinade for 10 minutes
  • Season your salmon with black ground pepper on both sides

BROILING YOUR SALMON
  • When placing your Salmon in the oven, place directly under the fire unit to achieve that crisp slightly burnt browing effect. 
  • Place your Salmon under broiler for 10 minutes
  • Then... without taking it all the way out of the oven, generously drizzle Maple Syrup evenly over the top pieces only
  • Continue to broil for an additionsl 2-5 minutes (to your liking)
  • Remove your Salmon from the oven and serve immediately   You Are Done!

BIG BRENS Crackle Barrel 3 Cheese Macaroni & Cheese Casserole
BIG BRENS Crackle Barrel 3 Cheese Macaroni & Cheese Casserole
PREPARATION TIME

SERVINGS

INGREDIENTS YOU WILL NEED:
  1. 5 8 oz Sticks of Crackel Barrel Mild and Sharp Cheddar Cheese Combined OR;
  2. 6 7 oz Old Croc All Natural Sharp Cheddar Cheese blocks
  3. 1 8 oz bag of shredded Polly Mozarella Part Skim ( Yoour Preference)
  4. 1 Box of Uncooked Elbow Macaroni- Your preference in noodle size
  5. 1 bos of Bread Crumbs
  6. 1 Can of Carnation Milk 
  7. Black Pepper
  8. 3X10X12 "Aluminum All Purpose Pan
PREPARING YOUR MAC & CHEESE DISH
  • Boil Water in Medium to Large Pot 
  • Add Macaroni Noodles- Cook 7-10 Minutes & Drain except 1/4 water in Noodles
  • Slowly add all Cheese in Noodles (A little at a time)-  Save some for later
  • In a medium size bowl beat together 1-1/2 Cansof Carnation Milk, 1 tablespoon of Breadcrumbs and 1-2 dashes of Black Pepper (or to your liking)
  • Mix all added ingredients into Cheese & Noodles in Pot- Mix well
LAYERING YOUR MAC & CHEESE
  • In a 3X10X12 " Aluminum All Purpose Pan, Pour 2-3 Layers of your Mac & Cheese into your Pan

BAKING YOUR MAC & CHEESE
Pre-Heat Oven to 400 Degrees
  • Place your Pan into the oven and cook covered for 30 minutes
  • Take your dish out of the oven and remove the cover
  • Place the dish back into the oven for an additional 10-15 minutes until light brown ( or to your preference)
  • Remove Pan from oven and let stand for 5 minutes

Both Mom and daughter takes equal credit for creating this great Thanksgiving Turkey Dressing  Dish.  Mom( Big Bren  and daughter(Lil Bren) both resides in California and was delighted to share this recipe with all of us.  



" This Turkey dressing is one of our most favorite dishes.  Its our own creation which has resulted in our favorite dressing when stuffing our turkey on Thanksgiving.  Please feel free to try our recipe out and we are confident that you will find it as tasty as we do"

INGREDIENTS YOU WILL NEED​
  1. ** 3 Boxes of Jiffy Cornbread Mix ( Makes 2 9" Pans
  2. (11/5 boxes of Jiffy Cornbread Mix) Per Dressing 9" Pan
  3. 1 medium Onion or 3/4 or to your liking
  4. 1 Green Pepper or 3/4 to your liking
  5. 1 Stick of Celery
  6. 1/4 Clove of Elephant Garlic
  7. Giblets from your Turkey
  8. 1 Jimmy Dean Sage Pork Sausage Roll
  9. 1 Jimmy Dean Hot Pork Sausage Roll
  10. 1 Cup of Chicken Broth/Stock ( whichever you prefer)
  11. 1 Cup of Raisins
  12. Poultrey Seasoning
  13. ** If only 1 pan, reduce ingredients to 1/2 as listed above**
PREPARING YOUR DRESSING 
  • Clean and boil Giblets until tender and done
  • Breakup 1 Jimmy Dean Sage & 1/2 Jimmy Dean Hot Sausage Roll  in a skillet/pan and cook thoroughly
** If you Chop the Sausage it will look like ground meat.- Not recommended**
  • In a large bowl, Sautt'e all of your above ingredients together separately (Set Aside)
  • Then... Crumble 1 1/2 box of Cornbread Mix and add 1-2 dashes of Poultry Seasoning
  • Now, add all of your other Saut'e ingredients including cooked sausages
  • Next, add 1 Cup of Broth/Stock a little at at time until moist
  • Lastly, add in 1 cup of Raisins  ( as much or as little as you prefer)
STUFFING YOUR TURKEY
  • Stuff your Turkey ( Do not pack in tight) 
  • After stuffing your turkey, add addtional broth for moisture to the remaining dressing and 
  • Cover in a glass oven-safe casserole dish.
  • Bake for 20-30 minutes on 385 Degrees
  • Remove your oven baked dressing from oven and let stand for 5 minutes-DONE!

Hey Family.  Theres a few dishes I enjoy more than others and I chose to share this recipe with you.  Its simple and taste great.  Once you make it you will want to do so time and time again.  

Jackie and I love having it as a part of our meal or just as a side dish.  Go ahead and try it on your own.  You can't go wrong with this Saltfish Fritter Dish.  Its one of my favorite Jamaican Recipes.  PS.  Looking very much forward to meeting everyone at the family reunion.

INGREDIENTS YOU WILL NEED:

  1. 200 grams salted cod, boned
  2. 1 1/2 cups all-purpose flour
  3. 1 1/2 tsp baking powder
  4. 1 tsp dried thyme leaves
  5. 1/2 tsp salt
  6. 1 1/2 tsp ground black pepper
  7. 1 tomato, diced
  8. 2 scallions (green onions), finely chopped
  9. 1 scotch bonnet pepper, seeded and finely chopped
  10. 1 large egg
  11. 3/4 cup water
  12. oil for frying
PREPARATION
  • Place the salt cod in a saucepan filled with enough water to cover the fish. Bring to a boil, then reduce the heat to a simmer. Cook for 5 minutes, then drain and rinse under cool water. Taste a bit of the fish to guage the saltiness. If it's still too salty repeat the boiling process again with fresh water until the fish is at the salt level you like (up to 3 times). Flake and shred the fish into small pieces and set aside.
  • Whisk together the flour, baking powder salt and pepper into a large bowl.
 
  • Add the diced tomatoes, flaked cod fish, green onions and chopped pepper to the dry ingredients, using a spoon to incorporate.
 
  • Lightly beat the egg and add it to the water. Combine the wet ingredients with all the dry ingredients. Add a bit more water if needed (should resemble a thick pancake batter consistency).
 
  • Heat a large skillet over medium heat. Pour in enough oil to cover the bottom of the pan. When the oil is hot drop rounded spoonfuls of the batter into the skillet. Fry on each side until golden-brown and crisp (about 3-4 minutes per side).
  • Drain on paper towels. Serve hot.
